An easy sandwich for a quick lunch at home or in the office. This version is with mortadella, grille eggplants, pistachio cream and dried tomatoes.

Step 1
Cut the eggplants in slices and grilled them until they are almost crispy. Remove them from the fire, add some salt and let the on a plate with some olive oil.








Step 2
Cut the bread in half and spread some mayo on both sides.





Step 3
Place some salad and tomato slices. Add your mortadella, grilled eggplants and some pistachio cream. On top of these ingredients add the sliced mozzarella and dried tomatoes.







Step 4
Add some other veggies on top and close your sandwich before warming it up for few minutes
