Ingredients

2cloves garlic
1.5 lbsground beef
1 Tbsptomato paste
1 teaspooncoconut aminos
2eggs
¼ cupunsweet almond milk
¼ cupalmond flour
1 tablespoonoregano
1 tablespoonthyme
1 teaspoonhimalayan salt
1 teaspoonblack pepper
bacon

tomato sauce
optional
mushrooms
sauteed, optional
For the Tomato Sauce:

Step 1
preheat oven to 350
Step 2
I using bacon begin cooking on a skillet or in a pan to your desired tenderness/ crispiness. We generally ½ cook it and then use it to top the meatloaf before going in the oven
Step 3
Mince the garlic and onion. Thinly slice the mushrooms (optional). Combine all of the meatloaf ingredients in a large bowl and knead with your hands until combined.
Step 4
Stuff the meatloaf mixture in a 9 x 5″ loaf pan. Cover with strips of semi-cooked bacon.
Step 5
In a small pot, combine the tomato sauce ingredients and simmer for a couple of minutes just to combine the spices. Pour over the loaf pan making sure nothing spills out.
Step 6
Place in the oven and bake for 50 minutes. Take it out of the oven and let rest 10 minutes. Serve and enjoy!!
