Oven Baked Mashed Potatoes with Meat

This is a Lebanese-style recipe for creamy mashed potatoes split into two layers with seasoned minced meat and pine nuts sandwiched between them, plus crunchy breadcrumbs on top.

1.5kgYukon potato
boiled, peeled and mashed
1 cupmilk
4 teaspoonbutter
½ teaspoonwhite pepper
½ teaspoonsalt
For the filling
2red onions
finely chopped
0.5kgBeef
minced
½ cuppine nuts
¼ teaspoonground cinnamon
½ teaspoonallspice
½ teaspoonsalt
1 tablespoonpomegranate molasses
2 tablespoonolive oil

Instructions
Step 1
In a large bowl, add the mashed potatoes (while it’s still hot) stir in the milk, and mix well. Add salt and white pepper then add the butter, keep mixing until you get a smooth mixture.

In a skillet with olive oil, Sauté the chopped onion & garlic until wilted, around 3 to 5 mins then add the ground beef, pine nuts, and cook for 6 to 8 mins, add the spices; cinnamon, 7 spices, salt and cook for another 5 minutes breaking apart any clumps of meat.

Grease a baking tray with a little vegetable oil, spread half of the mashed potatoes, evenly spread all the beef filling, then dollop the remaining half of the mashed potatoes on top, make sure to spread them out evenly.

Mix together the 2 tbsp melted butter breadcrumbs and dried parsley, and sprinkle on top of the second layer of potatoes. Bake uncovered at 190°C for 30 minutes or until golden brown.
