Crispy Fried Tomatoes
Oh MY these fried tomatoes are just the best! Crispy and crunchy but juicy inside. Can be made with green tomatoes or firm red tomatoes. Serve up for brekky or when entertaining!

Instructions
Step 1
Hello! Let's make these delicious crispy fried tomatoes. Start by slicing your tomatoes 1-2cm thick. Spread out onto a plate and sprinkle very lightly with salt on both sides. Set aside for 5 minutes to draw out extra moisture.
Step 2
You'll need to prepare 3 separate bowls while the tomatoes are sweating. In 1, mix all flour mix ingredients. In another bowl, mix the wet mix ingredients. In another bowl, mix the crumb ingredients.
Step 3
Pat dry your tomatoes and ready a large plate or rack nearby. Coat a slilce of tomato in flour mix, then transfer to the wet mix. Use two forks to coat in wet mix then coat in crumb. Set aside on the rack or plate and repeat til you've coated all your tomatoes.
Step 4
Shallow frying these tomatoes is best. Heat some oil and fry tomatoes for 2-3 minutes on each side til golden brown then drain on some paper towel.
Step 5
Mix all sauce ingredients in a small bowl. Plate your tomatoes, sprinkling with extra sea salt and dried parsley. Serve with sauce and devour immediately!
