Step 1
Soften butter in the microwave or in a pan

You'll bake on top rack at 350F for 1 hour- Preheat now

Mix all your dry ingredients first (mochiko flour, sugar, baking powder, salt). **Whisk+sift them well to break up any flour clumps.** You MUST**

Mix all your wet ingredients separately (eggs, coconut milk, milk, vanilla, melted butter).
Step 5
Pour the wet into the dry slowly while whisking or stirring constantly. Keep mixing vigorously until the batter is completely smooth — mochiko needs that extra mixing.
