Instructions

Step 1
Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°.

Grease bottoms only of two loaf pans, (8½" x 4½" x 2½") or 1 loaf pan (9x 5x 3) with shortening.
Step 3
Mixed sugar and butter in a large bowl. Stir in eggs until well blended.
Step 4
Add bananas, buttermilk and vanilla. Beat until smooth.
Step 5
Stir in flour, baking soda and salt just until moistened. Stir in the nuts if using.
Step 6
Pour into pans. Bake 8in loaves about 1 hour, 9 in loaf about 1 and 1/4 hours or until toothpick inserted in center comes out clean.
Step 7
Cool 5 minutes in pans on wire rack. Leasing sides of loaves from pans; remove from hands and place top side out on wire rack. Cool completely before slicing.
