A delicious homemade sauce using fresh tomatoes! Serve over pasta with fresh parmesan cheese on top!

Ingredients

3 tablespoonsolive oil
½ cuponion
3cloves garlic
minced
15Fresh tomatoes
¾ cupolive oil
or more
2 tablespoonswhite sugar
1 ½ teaspoonsdried basil
½ teaspoonsfennel seeds
1 teaspoonitalian seasoning
1 ½ teaspoonssalt
¼ teaspoonground black pepper
4 tablespoonsfresh parsley
chopped
For a meaty sauce add:

Step 1
In a Dutch oven, add 3 Tablespoons of olive oil and cook the onion and garlic until translucent.
Step 2
Remove the core of the tomatoes and add to Dutch oven.
Step 3
Add olive oil.
Step 4
Cook on medium heat, stirring often so tomatoes do not burn.
Step 5
Add remaining ingredients to the pot and cook over medium/low heat.
Step 6
Once it begins to bubble start smashing the tomatoes with the back of a spoon to help them break down.and stir well. Or use a potato masher.
Step 7
If you prefer, you can easily scoop out the tomato skins from the sauce.
Step 8
Cook until desired consistency.
Step 9
Use an immersion blender to finish, if desired.
Step 10
Add the meat and serve over pasta!
