Creole Praline Yam Casserole

Instructions

Step 1
Preheat oven to 350 degrees.

Yams

Step 2
Peel and cut yams into 1 inch cubes. Place cut yams into a heavy bottomed pot and fill with water. Place pot on stove over medium high heat until yams are easily pierced with a fork. * A 48 oz can of yams can be substituted for this step.
Step 3
Drain yams into a mixing bowl. Add butter, brown sugar, salt and white pepper to the yams. Begin mixing the yams using a spatula adding enough hot milk until the mixture is moistened. Continue whipping the yams until fluffy. Fold in the white raisins. Place raisin and yam mixture into a shallow buttered casserole dish.

Pecan Crumble

Step 4
Combine brown sugar, flour, and butter together until mixture begins to crumble. Fold in chopped pecans. Sprinkle crumbled topping over the yams.
Step 5
Bake uncover for 30 minutes or until topping is melted and crispy.
