Ingredients

1spaghetti squash
1 poundground pork
3 ouncespancetta
chopped
1onion
medium, chopped
3 cupsroma tomatoes
coarsely chopped, seeded
1 cuproasted red peppers
droined whole 30 compliant, chopped
4cloves garlic
minced
2 teaspoonsdried italian seasoning
½ teaspoonsalt
½ teaspoonred pepper flakes
½ teaspoonfennel seeds
finely crushed, optional
¼ cupfresh basil
chopped
1 tablespoonextra-virgin olive oil
Instructions
Step 1
CUT the squash lengthwise in half. Scrape out the seeds and Place the squash halves, cut sides down, in a 2-quart rectangular microwave-safe baking dish. Add cup water to the dish.
Step 2
Microwave, uncovered, on high until the squash is tender, 14 to 16 minutes. Let the squash stand until cool enough to handle.
Step 3
MEANWHILE, in a large skillet, cook the ground pork, pancetta, and onion over medium-high heat, stirring, until the pork is no longer pink.
Step 4
Drain off the fat.
Step 5
Add the tomatoes, roasted peppers, garlic, Italian seasoning, salt, crushed pepper, and fennel seeds.
Step 6
Cover and cook over medium heat, stirring occasionally, until the tomates softened, 4 to 5 minutes.
Step 7
Uncover and continue to cook, stirring and mashing with a spatula, until the mixture is saucy and well combined, 3 to 4 minutes more.
Step 8
Remove from the heat, Stir in the basil
Step 9
USE a fork to scrape the squash flesh into a medium bowl.
Step 10
Drizzle the olive oil and season lightly with salt
Step 11
Toss gently to coet: Spocese arrabbiata sauce over the squash and serve.
Step 12
Tip: If fresh tomatoes are not in season, substitute 1 can (28 ounces) Whole 30 compliant no-salt added diced tomatoes.
