Mahallabiyeh is a delicious Middle Eastern milk pudding specially when it comes together with pumpkin, using just few ingredients and about 10 minutes. It is super delicious.

Instructions
Step 1
In a saucepan put the pumpkin purée, saffron and milk cup and whisk until well mixed and smooth.
Step 2
In a medium heat, add the water/ starch mixture, sugar & whisk continuously for about 10 minutes until it starts to thicken.
Step 3
Lower the heat to low and continue whisking for a few more minutes until thickened to a pudding consistency. Ensure you lower the heat and continue whisking so the milk does not catch the bottom of the pot and burn.
Step 4
Add the blossom water and stir well for 5 minutes then remove the pumpkin pudding from the heat.
Step 5
Pour the pudding in cups while it’s still hot and leave it to cool down at room temperature.
Step 6
Garnish the pumpkin pudding with nuts, rose petals or mint leaf and serve.
