Baked Rice Pudding (Fırın Sütlaç)

This Turkish version of rice pudding takes the classic dessert to another level. It’s super creamy and rich with a browned top, and I love to eat it while it’s still warm and has a custard-like texture.

Step 1
Start with rinsing your rice clean. Add the rice to a large pot and add enough milk to cover it. Let the milk come to a boil and then reduce to simmer for 15min or until the rice is cooked.
Step 2
Stir in the rest of the milk, sugar, vanilla, and cornstarch. Allow to come to a boil, and then reduce and let it simmer for 20-25min while stirring occasionally. The rice pudding should be getting noticeably thicker but is still runny.

Preheat your oven to 400f and boil 2 cups of water in a separate pot.

Divide the rice pudding between your ramekins or baking pans. Pour a tablespoon of the yolk and milk mixture onto the top of the rice pudding and spread evenly using the back of the spoon. Place the baking dishes in a larger dish and pour the boiling water to create a waterbath.
Step 5
Bake for 25-30min, or until the top has formed a brown layer. Top with cinnamon, and enjoy while warm or chill in the fridge for a thicker consistency. Enjoy!
