Instructions
Activate Yeast
Step 1
In large bowl combine warm water, active yeast, and sugar. Whisk together and let sit for 5-10 minutes. Yeast is activated when it begins to bubble and layer of form sits on top of liquid

Prepare Pita

In separate bowl, combine dry ingredients (AP flour, whole wheat flour, and salt). Add into yeast mixture

Either by hand or with stand mixture, knead dough for 10-15 minutes until dough ball is fully combined and slightly sticky
Step 4
Coat separate bowl with touch of olive oil and place dough ball into bowl. Cover bowl with towel and let dough proof for 1-2 hours (to help dough proof make sure dough is not in cold area. You can place in oven with oven light on only to help)

After dough is rested, place on slight floured surface and cut into 10-12 even pieces. Roll pieces into small dough balls and cover with towel. Rest dough again for 20-30 minutes

Take small dough balls and roll with rolling pin into circular disk shapes about 1/8 inch thick. Then cover again for 20 minutes

Place pizza stone or baking sheet in preheat oven to 550F (or hottest oven will go). Carefully place pitas on baking surface and bake with door closed for 3 minutes on each side. Bread should puff and brown in the center of the surface
