Instructions
Step 1
Rinse rice in water until the water runs pretty clear
Step 2
Melt butter in saucepan over medium heat. Add onion, ginger, garlic, and cinnamon stick, and sauté 1 minute, or until fragrant.
Step 3
Stir in rice, and sauté 2 minutes, or until rice grains are opaque.
Step 4
Add coconut, coconut milk, water, sugar, salt, lime zest, white pepper, and bring to a boil over medium heat. Cover, reduce heat, and simmer 18 to 20 minutes, until rice is tender.
Step 5
