Cacio e pepe, perfect every time!
Because what they don't tell you on the internet it's a really tricky recipe.
This is fast food, so get your pasta in the water straight away and boil it for 2 minutes less than it says on the packet.
By placing the bowl on top of your pasta water, it slows the process down meaning your sauce will never split, but forms the emulsion and makes it beautifully silky and rich.

Step 1
In boiling salted water cook the pasta for 2 mins less than it say on the instructions.

Place a medium frying pan over a medium heat add the ground black pepper and toast for a few minutes.

Add the olive oil and a couple of spoons of past water to the pan, Add to heat proof bowl and keep warm โจโจ

Step 4
Drain the pasta, returning the pasta water back to the pan, add the pasta to the bowl and place over the hot water to keep warm.

Add enough past water so it covers the bottom of the bowl by 2mm (you can always add more layer)

Sprinkle over half the cheese evenly, let it melt before stirring.

Add the second half of the cheese allowing it to melt before stirring

Continuously but gently stir until thickened and creamy. Enjoy๐
