Easy Shredded Chicken - Mexican Style

Easy and delicious shredded chicken, perfect for meal prep in your diet program! Meal prep is a great way to plan ahead and make sure you will eat good and healthy food every day. The problem with the meal prep for me is lack of variety, some food gets mushy and feel not so fresh after the 2nd day, and some food that doesn't reheat well... So I found this video and adjusted one of the versions to fit my needs. This easy shredded chicken is really low in fat (no mayonnaise, no barbecue sauce...) but still very juicy! And it can be used in a variety of dishes - in tacos, in salads, on sandwiches... It is stored in its juices so it stays fresh longer and reheats well.

Instructions

Step 1
Put the chicken and all the seasonings in a wider pan (that has a lid) or pot and mix together well.
Step 2
Add the water and put the lid on. Cook for about half an hour to 45 min on low to medium heat on a stove.
Step 3
Once the chicken is cooked and tender start spreading with 2 forks in the juices it was cooked in. Don't worry if it feels like there is too much liquid - dreaded parts will soak it in in no time.
Step 4
Place the chicken in a meal-prep container along with all the remaining juices and store in a fridge.
Step 5
When you're ready to eat - take out the portion you need and reheat it either in a microwave or on the stove.
Step 6
You can serve it with rice, use in tacos, put on top of salads or make delicious sandwiches which is my favourite by far: Toast a slice of tosing brad, put some (preferably) homemade salsa and then some shredded chicken on top - you don't even need to reheat it! So delish!
