To start
Step 1
Add the yeast to the water wisk and wait 5 minute keeping some 70g of water for later
Step 2
Mix the two flours together whole wheat and bread flour
Step 3
Start kneading adding flour and knead for 10 15 minutes
Step 4
Add the salt when the dough gets together and add slowly the rest of the water so that the salt melts
Step 5
When you have a smooth ish dough add Evo and finish kneading
Step 6
Get out the dough and rest for 20 30 minutes
Dough is ready letâs make it perfect

After resting do some stretch and fold into the bowl like in the video until dough gets hard to pull paing attention that doesnât brake
Step 8
Rest for 20 30 minutes and repeat for 3 or 4 time every 30 minutes
Step 9
Rest for 30 minutes and pass it on the bench and do some slap and fold until smooth
And close the bottom pulling or do the Pirlatura as we say in Italian

Rest 1 night in fridge

Make balls in preferred size around 360g and rest for 4 ours at room temp for 4 to 6 ours or until they double in size
Step 12
Shape it making sure to stretch and pull and overlap the dough and closing it at the end like in the video

Rest in a floured towel for 1 our do the cuts on top and then cook it in a 425d oven place the bread on the stone on a hot pan add some water so it steams and close the oven door, cook for 16 22 minutes and enjoy
