Baked Turkey Muffins
You can substitute instant oats or gluten free quick cooking oats according to your macros or preference.
This recipe works great with ground beef or chicken too
Feel free to use any of your favorite seasonings
For the best muffins, use a silicone muffin pan. I swear by this one!

Instructions
Step 1
Chop the bell pepper and onion into small pieces
Step 2
Combine all ingredients, turkey, onion, egg whites, bell pepper, oats, into a bowl and then season Mix evenly.
Step 3
By hand, make little balls and place them into the muffin pan. If you are making them on a flat sheet, drop the ball directly onto the sheet and make sure you have a good amount of space in between them. You can use an ice cream scoop if you want to be perfect but that's not necessary. I personally don't like raw meat on my ice cream scoop but that's just me.
Step 4
Bake at 375 for 40 minutes. Serve alone or with sugar free ketchup, or hot sauce. These will keep well covered up in the fridge so don't be afraid to make a big batch at once.
