Instructions

Preheat the oven to 400°F.

Slice the spaghetti squash in half lengthwise and scoop out the seeds and ribbing. Drizzle the inside of the squash with olive oil and sprinkle with dried basil, salt, and pepper.

Place the spaghetti squash cut side down on the baking sheet and use a fork to poke holes. Roast for 30 to 40 minutes.

In a large saucepan, melt the butter and 1 tbs olive oil on med-hi heat. Add in garlic, cook about 1 minute then add in your shrimp with remaining spices and cook 1 minute each side.

After you flip the shrimp for the second minute of cooking, add in your baby spinach and the juice of one lemon. After spinach begins wilting and shrimp is cooked, turn off the stovetop and remove the pan from heat.
Step 6
Fluff your spaghetti squash strands and toss in a bowl with parmesan, parsley, and a splash of olive oil.

Spoon some of your spaghetti squash on a plate and top with your shrimp with some of the garlic sauce.
