Instructions
Step 1
Remove the sausage meat from the skin. Then heat a large frying pan over a medium high heat. Add the sausage meat, break up with a wooden spoon into small pieces. Fry for 3-5 minutes until golden.
Step 2
Add the chopped vegetables and cook for a further 5 minutes until the vegetables are soft. Stir in the Cajun spice.
Step 3
Add the rice, stir to coat the grains in the fat from the sausages. Pour in the stock and bring to the boil. Cover with a lid then reduce the heat and simmer for 15-20 minutes stirring now and again until the rice has absorbed the stock.
Step 4
Scatter over the spring onions and serve.
