Instructions

Step 1
Peel and chop beets
Step 2
Chop potatoes (no need to peel, but you can, if you'd like).
Step 3
Boil potatoes and beets until soft enough to mash.
Step 4
Strain and mash.
Step 5
Add butter, oat milk and half of the goat cheese and combine.
Step 6
salt and pepper to taste.
Step 7
Serve with the rest of the goat cheese sprinkled on top.
