Crispy Smashed Potatoes

Crispy roasted potatoes, boiled and smashed, then roasted to completion. Can be topped in a variety of ways to make a main dish, or left as is for a side. (Video includes two main dish examples.)

Step 1
Preheat oven to 425°F
Step 2
Wash your potatoes and put in a cold pot of water. Salt the water and bring to a boil.
Step 3
Once the water boils, reduce to medium and keep at a simmer for 30 minutes or until fork tender.
Step 4
Smash an entire head of garlic, and place all the cloves, skin on, in a bowl. Add in the thyme and bay leaves. Pour over the olive oil and stir to combine.
Step 5
Cover a foil-lined baking sheet with more olive oil, and salt and pepper the bottom of the tray.
Step 6
Place the potatoes on the sheet, and smash them lightly. They should form 1/2 inch thick patties and have nice, flat surfaces on both sides. You may need to use a second baking sheet.
Step 7
Pour the herb and oil mixture over the potatoes, making sure to evenly distribute both the oil and the potatoes. Salt and pepper the top, too.
Step 8
Bake at 425°F for 40-45 minutes.
