Ugandan Curry Potatoes

Instructions
Step 1
Wash and cut the potatoes into small cubes. Parboil in water with a pinch of salt until soft.
Step 2
Heat the olive oil in large pan over medium heat. Add onions and fry until onions are turning brown.
Step 3
Add garlic and cook for 60 seconds. Add tumeric, cayenne, cinamon and coriander and stir well. Add the tomato paste and lemon juice and stir again.
Step 4
Add the potatoes and add a pinch of salt, stir again. Add water until potatoes are covered
Step 5
Cook, uncovered, for about 10 minutes or until the potatoes are fully tender and then juices in the pan are thickened and coating the potatoes. Add parsley just before serving.
