White Bean Jackfruit Chili

Ingredients
6 servings
2 Tbspavocado oil
or olive
4 clovesgarlic
large, minced
1white onion
medium, diced
2 tspcumin
1 tspchili powder
½ tspsmoked paprika
1 tspdried oregano
1 x 7 ozcan chopped green chilies
or 2 4 oz can if that’s all you can find
1 x 15 ozcan white beans
cannellini, great northern or navy will work
1 x 15 ozcan pinto beans
1 csweet corn
fresh or frozen
4 cvegetable broth
½ tspsalt
½ tsppepper
2 Tbspavocado oil
or olive, for jackfruit
1 x 20 ozcan jackfruit
rinsed & drained, I used green jackfruit and pulled the big chunks apart so that it was more shredded
1 ½ tspseasoning salt
vegan, chickenless
¼ tspsalt
¼ tsppepper
Cilantro
for topping
lime juice
½ Tbspnutritional yeast
per serving
Instructions
Step 1
1. In a large pot, over medium heat, add oil, garlic and onion. Cook for about 3 minutes or until onion is translucent
Step 2
2. Add cumin, chili powder, smoked paprika, oregano and combine well
Step 3
3. Add green chilies, both cans of beans & corn, combine well
Step 4
4. Add vegetable both, salt & pepper and bring to a simmer. Let cook for 10 minutes
Step 5
5. While chili is cooking, add oil and jackfruit to a skillet and cook over medium heat. Add the chickenless seasoning, salt & pepper
Step 6
6. Cook well, stirring occasionally. Let some of the jackfruit brown a bit. About 8 minutes total
Step 7
7. Add jackfruit to the chili and mix
Step 8
8. Serve chili, add nutritional yeast (if using) and mix then garnish with cilantro, a squeeze of lime juice
