White Bean Jackfruit Chili

Instructions

Step 1
1. In a large pot, over medium heat, add oil, garlic and onion. Cook for about 3 minutes or until onion is translucent

2. Add cumin, chili powder, smoked paprika, oregano and combine well

3. Add green chilies, both cans of beans & corn, combine well
Step 4
4. Add vegetable both, salt & pepper and bring to a simmer. Let cook for 10 minutes
Step 5
5. While chili is cooking, add oil and jackfruit to a skillet and cook over medium heat. Add the chickenless seasoning, salt & pepper
Step 6
6. Cook well, stirring occasionally. Let some of the jackfruit brown a bit. About 8 minutes total
Step 7
7. Add jackfruit to the chili and mix
Step 8
8. Serve chili, add nutritional yeast (if using) and mix then garnish with cilantro, a squeeze of lime juice
