Smothered Chicken and Gravy

Instructions

Step 1
In a medium sized pot on a medium heat, add the olive oil and seasoning blend. Saute until browned; about 30 minutes. Then add in minced garlic and saute for a minute.
Step 2
Remove the sauted vegetables and add the canola or vegetable oil. When it's hot, place the chicken skin side up. Season with cajun seasoning.
Step 3
Fry down the chicken on both sides until browned really well.
Step 4
Add in about 1 1/2 cups of water (just enough to not even cover the chicken), cover with a crack in the lid and let that fry down until the water is almost gone.
Step 5
Once fried down, add in a little more water ( about the same amount), the sauted veggies, and the roux. Bring to a simmer and let smother for about an hour.
Step 6
Serve over rice.
