Ingredients
6 servings

3 Tbspgrape seed oil

6 slicesbacon

1 Tbspminced garlic
roasted

0.5 lbchicken livers
minced

1 lbground chicken

1spanish onion
small, small diced

3 stalkscelery
small diced

1red pepper
small diced

1jalapeno
small diced, seeds left in

1 Tbspcajun seasoning

1 qrtchicken stock

2 cupslong grain rice

salt
to taste

cilantro
optional, for garnish
Instructions
Step 1
In a large saucepot, place oil, bacon and garlic in then turn on heat to medium. This allows more rendering of pork. Cook until browned.
Step 2
Add in chicken livers and ground chicken, cook until almost all pink is gone.
Step 3
Add in vegetables, Cajun seasoning and 1 cup of broth. Make sure you scape bottom of pan to get all fond, flavor up into dish.
Step 4
Add in rice, remaining stock and season with salt. Bring to a boil. Reduce to simmer cover until rice is cooked, about 15-20 minutes.
Step 5
Serve and top with cilantro! Enjoy!
