Strawberry bread
Notes for permanent edits, which Whisk refuses to save right now! 4 cups diced strawberries and 1/4 tsp baking soda. Pour batter into largest casserole dish and overflow into pie tin if needed. The batter should be no deeper than 1 inch. Can be half an inch. Cut into rectangles for serving.
Try covering with foil from the beginning next time instead of at the hour mark for another 20 min.
Used 3.5 or 4 cups strawberries last time. Used the larger, shallower baking dish successfully. Covered with foil after 30 min. Should reduce the baking soda/powder because of the reduced 1 cup of flour. The batter was bitter.

Step 1
Beat eggs, butter, sugar, and vanilla. Mix in flour, oats, cinnamon, soda, salt, and baking powder. Add strawberries and mix well. Pour into a sprayed 4×8" loaf pan. Bake one hour at 350°.
