2 lbsboneless skinless chicken thighs
¼ cupolive oil
2 Tbsplemon juice
2 clovesgarlic
minced
0.5onion
sliced thin
1 tsppaprika
1 tspcumin
½ tspground coriander
½ tspred pepper flakes
¼ tspturmeric
¼ tspcardamom
¼ tspcinnamon
1 tspsalt
1 tsppepper
½ cupplain whole milk greek yogurt
1 Tbspdill
fresh chopped
0.5garlic clove
large, minced
¼ cupcucumber
finely shredded, squeeze out excess liquid
½ Tbsplemon juice
1 tspolive oil
salt
to taste
cucumber
chopped
red onion
thinly sliced
parsley
chopped
naan
or pita
Instructions
Step 1
add all chicken shawarma ingredients to a large bowl or bag and combine. let marinate in the fridge for at least 1 hour.
Step 2
prepare the tzatziki by combining all ingredients in a small bowl.
Step 3
transfer marinated chicken to pressure cooker. click the “pressure” button and adjust the time to 5 minutes. once it’s done cooking, let it natural release. shred the chicken with 2 forks.
Step 4
assemble starting with naan or pita, a layer of hummus, chicken, cucumber, tomato, red onion, tzatziki & parsley
