Instructions

Step 1
Prep your green beans by snapping the end off! Like how the grandma's do.
Step 2
Cut the ribs so they're separate, put them in a big pot and cover with water. Set to medium/medium high heat and let them hang out. When the top of the water starts to get the gross stuff floating on top, scrape that shit off.
Step 3
After you've skimmed the top of all the nastiness, add your sliced onions and tomatoes. Let those all simmer together for about 15-20 minutes then add your green beans.
Step 4
Anyway, let all those mingle together. Once the green beans start to look cooked through I add a few handfuls of baby spinach and 1.5 packets of the tamarind soup mix

*We like ours tangier so I usually end up adding the full second packet but it's really personal preference
Step 6
Turn the heat off, serve it over white rice. It makes a TON
