This is a perfect, sharp coleslaw. Full of flavour and easy to make, with just a few ingredients. Easy to adapt if you'd like something slightly less sharp or salty, just change the ingredients in the dressing accordingly to your taste. You can also skip the onion and apple, if you'd like something more basic.

Instructions

Step 1
Cut the cabbage into quarters and remove the core. Shred into nice, thin strips, then place in a large bowl.
Step 2
Finely chop the parsley and the onion, grate the carrots and the apple, then place in the bowl and toss to mix.
Step 3
In a separate jug, stir the mayonnaise, vinegar, mustard, celery salt, pepper and maple syrup together.
Step 4
Taste the dressing before adding to the coleslaw mix, you may want to adjust for creaminess, sharpness or sweetness to taste. When you're happy with your dressing, add to the vegetables and mix well.
