Easy Marinara Sauce

Zesty and smooth marinara, just like your Mamma used to make. Easily superior jarred or canned pre-made sauce. Use it for pasta dishes like in your lasagna or as a pizza sauce. This sauce can be made with real tomatoes, but they will have to be scored, blanched in boiling water with a little lemon juice, shocked in an ice bath, peeled, seeded and then crushed, perhaps in a food processor. I tend to opt for the cans of crushed tomatoes because it's much easier, thus the title of the recipe.

Instructions

Step 1
Add 1 tbsp of olive oil to a saucepan and bring up to medium-low heat. Finely dice the onions and garlic
Step 2
Sauté the onions until translucent. You're not trying to brown the onions, just sweat them. After about 5 minutes, clear a spot in the pan, add some more olive oil, add the garlic and fry until fragrant, about one minute.
Step 3
Pour in the crushed tomatoes (or real tomatoes), oregano, salt, pepper and sugar and about one cup of water. The sugar is to cut the acidity of the tomatoes. Bring to a gentle boil, partially covered.
Step 4
Reduce to a simmer and cook partially or fully covered for about 2 hours, longer if you have the time. Check the consistency from time to time, if it is becoming too thick and doesn't run off a wood spoon readily, add a little hot water.
Step 5
Take off the heat and added finely chopped basil and stir it in. Check the seasoning, it may need salt, pepper or a little garlic powder to balance it. Use immediately in a pasta dish or allow to cool and preserve in the fridge. Freezes well.
