Instructions

Step 1
Prepare a bowl of ice water.
Step 2
Fill a large saucepan with water.
Step 3
Add the distilled vinegar and bring the water to a boil.
Step 4
While the water is coming to a boil, prepare the dressing.
Step 5
In a small bowl, combine the yogurt, cider vinegar, maple syrup, salt, and pepper.
Step 6
Whisk together until blended.
Step 7
Set aside.
Step 8
Fit a food processor with its slicing disc.
Step 9
Cut the cabbage into wedges and push the wedges down the feeder tube to shred it.
Step 10
Add the cabbage to the boiling water and cook for 10 seconds.
Step 11
Drain and immediately plunge the cabbage into the ice water to stop the cooking.
Step 12
Drain thoroughly, and transfer the cabbage to a large bowl.
Step 13
Add the apple, shallot, and walnuts.
Step 14
Pour the dressing over the slaw, and toss to coat.
Step 15
Refrigerate for 1 hour before serving.
