Roasted Cherry Tomato Tart

Instructions

Step 1
Preheat the oven to 400 degrees.
Step 2
Add tomatoes, garlic, thyme, olive oil, salt, and pepper to a sheet pan. Move tomatoes around so they get coated with olive oil and seasonings.
Step 3
Roast tomatoes at 400 degrees until tomatoes start to release their juices and slightly blister. About 20-30 minutes.
Step 4
Remove tomatoes from the oven and set them aside to cool.
Step 5
Increase oven to 425 degrees.
Step 6
Remove puff pastry from the fridge and place it on a clean work surface. Unfold the puff pastry. Using a knife score a ½-inch border around the edge of the puff pastry. This will allow the puff pastry to form a border around the roasted tomato filling.
Step 7
Squeeze the roasted garlic cloves from the skin onto the tart. Spread the cloves on the inside border with a knife.
Step 8
Sprinkle half of the cheese over the garlic. Using a slotted spoon, spoon the roasted tomatoes on top of the cheese*.
Step 9
Sprinkle the remaining cheese on top of the tomatoes.
Step 10
In a small bowl prepare the egg wash by whisking the egg and cold water together until well incorporated.
Step 11
Brush the egg wash on the outside border of the puff pastry. This will ensure a shiny golden brown crust.
Step 12
Bake the tart at 425 for 20-25 minutes until golden brown.
Step 13
Remove from oven and allow to cool for 5-10 minutes.
Step 14
Slice and garnish with chopped chives and enjoy warm!
