Instructions
Step 1
Heat pressure cooker with 2 Tablespoons of fat over medium high heat until oil shimmers.
Step 2
Brown goat meat in batches, setting aside as it gets browned.
Step 3
Add chicken stock and 1 Teaspoon of salt to pressure cooker. Add goat meat and any accumulated juices.
Step 4
Pressure cook on high for 1 hour.
Step 5
Quick release pressure and check that the meat is tender by inserting a sharp knife.
Step 6
Add papaya, onion, bouquet garni, 6 whole hot Thai chilies, and can of diced tomatoes to the pressure cooker.
Step 7
In a small bowl whisk cold water with 1.5 Tablespoons of flour until well combined. Add Gravy Browning and mix. When fully incorporated, add to the pressure cooker.
Step 8
Make quick dumplings by whisking together flour, baking powder, and salt. Cut in the butter.
Step 9
Mix in the buttermilk until just combined.
Step 10
Pull off “droppers” the size of a large grape and add them to the pressure cooker.
Step 11
Seal the pressure cooker and cook on high for an additional 30 minutes.
Step 12
Quick release pressure. Taste, and adjust salt as needed
