2Red Onions
Medium, sliced
2 tablespoonsvegetable oil
2 tablespoonsred wine vinegar
2spring onions

0.25Scotch Bonnet

Instructions
Step 1
Add the beef to a bowl add all the marinade ingredients on top and rub into the beef ensuring all sides are coated, then leave to rest.
Step 2
In a large frying pan add in 2 tablespoons of vegetable oil along with 2 tablespoons of red wine vinegar, add in the slices of red onion and mix. Turn on the heat and fry the onions on low heat until caramelised, this should take around 15 minutes. Remove from the pan and into a bowl. Add another two tablespoons of oil to the pan and add the beef, leaving to cook for 5 minutes on each side on medium heat, once all sides are cooked brown off both ends. Remove the beef from the pan. While the beef is resting clean out the pan and add a tablespoon of oil and then add the spring onion, scotch bonnet and thyme a cook on low heat. While the oil is being flavoured add in the butter and stir the pan. Slice up the rested beef around 2-3 mm thick and add into the pan and cook for about 2 minutes on each side turn off the heat and cover with a lid.

Slice the panini in half and toast.

Time to build the sandwich

Place a layer of baby Spinach on the bottom half of the panini, followed by a layer of tomato slices. Add a layer of the beef on top. Now add two slices of cheese to each sandwich. Place the sandwich bases onto a grill rack, place them under a hot grill allow the cheese to melt and then remove from the heat.
Step 6
Place the tops of the panini onto the bases and serve, lick your lips and enjoy.
