Mushroom miso soup

Soup to prep at home and finish cooking at work. I use a mushroom xo with Chinese five spice and chili in it. Yum!

Step 1
1. In a microwave proof container, slice and add tofu puffs, mushrooms, broccolini and spring onion. Add mushroom xo and spinach.
Step 2
2. Add most the boiling water and micro wave on high for 2 minutes. Check that the veg is cooked to your liking and if needed give it another zap
Step 3
3. In a small bowl loosen the miso paste with remainder of water, then stir through soup and serve.
Step 4
4. Good additions include bean sprouts, ramen eggs, cooked noodles, and maybe a dash of sesame oil
