Ingredients

Thai Basil Chicken

4 x 6 ozboneless skinless chicken breasts
trimmed of fat

3cloves garlic
peeled and minced

2jalapeno peppers
minced

1 tablespoonfish sauce

1 tablespoongranulated sugar

¼ cupfresh basil
chopped

1 tablespoonfresh mint
chopped

1 tablespoonunsalted dry-roasted peanuts
chopped
Brown Rice Pilaf
Instructions
Thai Basil Chicken
Step 1
Cut each chicken breast into about 8 strips. Set aside.
Step 2
Coat a large nonstick skillet with cooking spray and warm over medium-high heat. Add garlic and jalepnos. Saute, stirring constantly, until garlic is just golden.
Step 3
Add chicken strips and cook, stirring frequently, until chicken is fully cooked, about 8 to 10 minutes.
Step 4
Add fish sauce and sugar. Saute for 30 seconds and remove from heat. Garnish with basic, mint, and peanuts before serving.
Brown Rice Pilaf
Step 5
Place chicken broth and brown rice into the rice cooker.
Step 6
Once the rice is done, melt butter in a medium heavy-duty pot over medium heat. Add shallot, garlic, and cook until tender, about 1 to 2 minutes.
Step 7
Add rice, and thyme, stirring well to coat with others. Cook for a few minutes and season with salt and pepper.
