Shrimp and Egg Roll Vermicelli Bowls
This is how I make shrimp and egg roll vermicelli bowls at home. It looks like a complicated recipe, but it’s really not as long as you have the ingredients on hand. You can always sub the ingredients with what you have on hand and make something similar. I had frozen egg rolls, shrimp and veggies. The fish sauce is always in my fridge. I’ve shared this recipe before. Once you made a batch of it, it lasts for months.

2 lbsshrimp
peeled & deveined
Frozen egg rolls
homemade or store bought
1 Tbspoil
1 Tbspbutter
1onion
2 Tbspminced garlic
½ tspgarlic powder
½ tspblack pepper
3 Tbspoyster sauce
2 Tbspcrab paste with soya bean
optional, but def recommended
1 cupbasil
Nuoc Cham
Vietnamese fish sauce, must have
1 packagevermicelli noodles
vegetables
Assorted, lettuce, bean sprouts, cucumbers, mint, cilantro or any of your choice
crushed peanuts
Instructions
Step 1
Boil 6 cups of water and cook vermicelli then air fry egg rolls.
Step 2
In a frying pan, add oil, butter, onions & garlic. Sauté until fragrant. Add shrimp, garlic powder, black pepper, oyster sauce and crab paste. Cook until shrimp turns pink. Add basil and cook for 1 minute.
Step 3
Assemble your bowl with noodles, vegetables, egg roll, then shrimp. Add a generous amount of fish sauce and crushed peanuts.
