Gordon Ramsay's Chili Beef Lettuce Wraps
Great food doesn't have to be complex, as these simple beef lettuce wraps show. They are really quick to make and are perfect with a few beers at the start of the evening. It's really important to get a good color on the ground beef. Be bold and take it further than you've ever dared before.

Ingredients
4 servings
olive oil
8 ounceslean ground beef
8 ouncesground pork
sea salt
freshly ground black pepper
toasted sesame oil
2garlic cloves
peeled and finely chopped
2 inchfresh ginger
piece, peeled and finely chopped
1red chiles
seeded and chopped
1 Tbsplight brown sugar
1 Tbspfish sauce
zest of lime
0.33lime
juice of
3scallions
trimmed and chopped
2lettuces
Boston, separated into leaves to serve
For the Dressing
Instructions
Step 1
Heat a large frying pan and add a little oil. Mix the ground beef and pork together. Season with salt and pepper and mix well to make sure the seasoning is evenly distributed. Cook the meat in the hot pan for 5-7 minutes until crisp and brown and broken down to a fine consistency. Drain the crisped meat in a sieve - this will help it stay crisp. Set aside.
Step 2
Wipe out the pan and add a tablespoon of toasted sesame oil. Add the garlic, ginger, and chiles. Cook with a pinch of salt and the sugar for 2 minutes. Add the drained meat and stir to mix.
Step 3
Add the fish sauce and heat through. Stir in the lime zest and juice, then add the scallions, stirring for 30 seconds. Turn off the heat.
Step 4
Mix all the dressing ingredients together and adjust the seasonings to taste.
Step 5
To serve, spoon some of the meat mixture into the lettuce leaves, drizzle with a little dressing, and serve.
