Cookie Crust

2 cupsflour

½ tspbaking soda

½ tspsalt

⅔ cupbutter
softened

½ cupsugar

⅔ cupbrown sugar

1egg

2 tspvanilla

1 ¼ cupchocolate chips
Cheesecake Filling
Instructions
Step 1
Preheat your oven to 350 degrees Fahrenheit
Step 2
Line an 8x8 or 9x9 square baking pan with parchment paper or aluminum foil. Spray the bottom with nonstick spray or grease with butter.
Step 3
In a large bowl mix together the flour, baking soda, salt for the cookie dough.
Step 4
Cream together the softened butter, sugar and brown sugar until fluffy.
Step 5
Add the egg, vanilla and mix to fully combine.
Step 6
Add the flour mixture and mix to combine.
Step 7
Fold in the chocolate chips

Take a little more than half of the cookie dough and press it into the bottom of the pan.
Step 9
In another bowl beat the softened cream cheese until smooth.
Step 10
Add the sugar, egg, vanilla, and optional lemon juice and almond extract if you are using them. Beat until all combined

Spread the filling over the cookie dough.
Step 12
Take the remaining cookie dough and form balls then flatten in your hand and add the circles on top of the filling. It's ok if there is space between them with filling showing. It will all bake and stick together. You could also just crumble the cookie dough on top if you choose.
Step 13
Bake at 350 degrees Fahrenheit for about 40 minutes. This will vary depending on your oven. The cookie dough will be golden brown and the cheesecake will be set.
Step 14
Allow to cool to room temperature and then refrigerate. After they are cold and set you can remove them from the refrigerator and cut them into squares.
