Instructions
Step 1
Preheat oven to 450 degrees
Step 2
halve brussels sprouts, quarter apple, stem and remove thyme, season chicken with 1/4 tsp of salt and a pinch of pepper
Step 3
Toss Brussels sprouts in mixture of paprika, 1 tsp olive oil, 1/4 tsp salt and a pinch of pepper. Place Brussels sprouts on a prepared baking sheet spread into a single layer. Roast until tender, about 10 minutes.
Step 4
While sprouts roast place a medium pan over medium heat and add 1/2 tsp of olive oil. add apple slices to pan in a single layer and sear until lightly browned, about 2-3 minutes
Step 5
return pan used to sear apples to medium-high heat and add 1/2 tsp olive oil. add chicken and sear undisturbed until lightly brown, about 2-3 minutes per side.
Step 6
Add chicken to baking sheet with brussels sprouts, shingle seared apples on chicken and cover with gouda slices.
Step 7
Roast until chicken reached an internal temperature of 165 degrees, approximately 3-5 minutes. While chicken cooks makes sauce.
Step 8
place apple cider and thyme in pan used to sear chicken over medium-high heat. bring to a boil and cook until sauce is the consistency of a light syrup. Approximately 30-60 seconds. Remove from burner and swirl in butter and season with a pinch of salt and pepper.
Step 9
Plate and drizzle the sauce over the chicken,
