Step 1
In a mixing bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg until well combined.
Step 2
In a separate bowl, whisk together buttermilk, eggs, melted butter, and sweet potato. Add the wet ingredients to the ingredients and stir together until well combined. **If you don’t have a stuffed waffle maker, add chopped pecans and marshmallows to the batter.**
Step 3
Preheat waffle iron. Spray waffle iron with cooking spray, add 1/3 cup of waffle batter, top with pecans and marshmallows and then top with another 1/3 cup of batter. Cook until the outsides of the waffles are lightly browned and cooked through
