Step 1
1. Roast the tomatoes, garlic cloves, serrano peppers, and 1/2 onion using your preferred method. (Air fry at 360* F for 10 minutes)

2. Once roasted, blend well with 1/2 c water and chicken bouillon (or salt) to taste. (This salsa is good for 4 servings)

3. Grease a pan with avocado oil spray and add the salsa. Warm it on low heat while you continue cooking.

4. Finely chop the remainder of the onion.

5. Mix 1/3 c egg whites, 1 egg, 1 tbsp milk, salt, and pepper to taste.

6. In a greased pan, cook on low heat and put to the side.

7. Warm up 3 tortillas on a comal.
Step 8
8. Dip the tortillas in the salsa and evenly add the scrambled eggs into the 3 tortillas.
Step 9
9. Top with about 1/2 c of salsa, 28 G queso fresco, 2 tbsp of non fat Greek yogurt (or sour cream), and more onion.
