Step 1
1: Fry the mince in a hot pan for 5-6 minutes until browned then set-aside, in the same pan, fry the onion and garlic over a medium heat for around 4 minutes. Add the reserved mince, chopped tomatoes, tomato sauce and simmer for another 5 minutes until thickened. Season with salt and pepper.

2: Meanwhile cook the pasta to the packets instructions in a large pan of boiling water along with a pinch of salt, drain then toss through the tomato sauce. Pour into a baking dish and top with the cheese and breadcrumbs. Bake in a pre-heated oven set at 200c / gas mark 6 for 20 minutes or until golden. Sprinkle over the red onion and gherkins and enjoy.
