Instructions
Step 1
Submerge green onions in a bowl of ice water until onions begin to curl, about 10 minutes. Drain well & pat dry.
Step 2
In large Dutch oven, pour oil to a depth of 4 inches & heat medium-high heat until a deep-fry thermometer registers 350°. Line a rimmed baking sheet with paper towels.
Step 3
In medium bowl, whisk cornstarch, flour, & salt; transfer half of mixture to another medium sized bowl. Toss potatoes in one bowl of cornstarch mixture until well combine. Toss all onions in remaining bowl of cornstarch mixture until combined. In a large bowl, toss together potatoes & onions.
Step 4
Working in batches of one small handful at a time, fry potato-onion mixture, gently stirring occasionally, until golden brown, 2 to 3 minutes. Let drain on paper towels; sprinkle with salt, if desired. Serve immediately.
