For the BATTER

80gflour

40gcornstarch

1 Tspbaking powder

fresh rosemary
small, chopped

110mlbeer
or sparkling water

salt

For the DIP
Instructions
Step 1
Remove the pit from your olives, add some cheese inside and cover them with flour.



Step 2
For the batter, mix flour with cornstarch, baking powder, a small bunch of fresh rosemary, salt, pepper and cold beer (or sparkling water).







Step 3
Dip your olives in and fry for about 5 mins or until golden along with some fresh rosemary for 15 seconds.




Step 4
For the sauce, mix your Greek Yoghurt with mayo, garlic, lime juice, salt and chive.








Step 5
Serve your olives with your fried rosemary, a sprinkle of sea salt on top and your sauce. Buon appetito!
