Recently watched Disney’s ratatouille and really wanted to make the dish to try. Definitely a delicious vegan dish to make and is really easy! I personally will make again, but add ground beef to the sauce 😂😂

For the sauce
2 Tbspolive oil
12 oztomato puree
crushed and peeled
4cloves garlic
chopped
0.5onion
chopped
1bell pepper
chopped
2 Tbspbasil
chopped
2 TbspItalian parsley
chopped
1 Tbspthyme
chopped
salt
to season
pepper

For the vegetables
1squash
thinly sliced
1zucchini
thinly sliced
1Japanese eggplant
thinly sliced
2Roma tomatoes
thinly sliced
Garnish
Instructions
Step 1
1. Thinly slice zucchini, squash, eggplant, Roma tomatoes and set aside
Step 2
2. **If you are using fresh tomatoes for the sauce, boil, peel, crush, and puree, if using canned, skip this step

3. Add olive to a skillet
Step 4
4. Add in chopped garlic, onions, bell peppers, fresh herbs, and tomato puree

5. Season generously with salt and pepper

6. Sauté and reduce slightly
Step 7
7. Take off the heat
Step 8
8. Add sliced vegetables on top of the sauce

9. Sprinkle fresh herbs on top

10. Place parchment paper on top
Step 11
11. Bake at 375 degrees for 45 minutes, removing the parchment paper for the last 15 minuted

12. Plate and serve
