Instructions
Step 1
Make a paste with the sun-dried tomatoes by chopping them as finely as possible.
Step 2
Heat the olive oil in a pan, add the chickpeas and stir to heat evenly.
Step 3
After 5 minutes, add the sun-dried tomatoes and sprinkle the with the smoked paprika and salt to taste. Stir well and turn off the heat.
Step 4
Toast the bread until golden and crisp.
Step 5
Slice the avocado in half, smash it with a fork, and spread over the toast.
Step 6
Top with the warm chickpea mixture. Sprinkle with the lime juice and a pinch of salt and pepper.
