Indian spiced Poha (Flattened rice) with cilantro chutney

‘Poha’ is probably that one breakfast item that is universally loved and made differently in different parts of India. Since I lived in quite a few parts of India myself, I probably picked the best parts from everywhere and made my own version!

Ingredients
4 servings
2 cupsrice flakes
flattened, available in most indian stores as ‘thin poha’
1 Tbspcoconut oil
1 Tbspblack mustard seeds
2fresh curry leaves
¾ cuproasted peanuts
1onion
finely chopped
1 cuppotatoes
finely cubed
1 cupcarrots
finely chopped
1 cupgreen peas
1tomato
finely chopped
2green chilis
finely chopped
½ cupgarlic leaves
finely chopped, or scallions
1 Tbspturmeric powder
½ Tbspred chili powder
1 tspdried mango powder
amchur
½ cupcilantro leaves
finely chopped
1 Tbspchaat masala
bhujia
for garnish, available in most indian stores
Spicy cilantro chutney
Instructions
Step 1
Rinse thoroughly and drain 2 cups thin flattened rice in a colander. Keep aside 🍚
Step 2
In a large wok, heat 1 tbsp coconut oil and 1 tbsp mustard seeds till they start to splutter 🍚
Step 3
Now add 2-3 curry leaves and about 3/4 cup roasted peanuts and sauté for a few seconds 🍚
Step 4
Add 1 finely chopped onion and sauté until the onions are translucent 🍚
Step 5
Now add 1 cup each of finely chopped potato, carrot and peas and sauté for 30 seconds 🍚
Step 6
Add 1 finely chopped tomato, 2 green chillies slit into halves and some finely chopped garlic leaves. Sauté for another 30 seconds 🍚
Step 7
Add some salt, 1 tbsp turmeric powder, 1/2 tbsp red chili powder, 1 tsp amchur (dried mango powder). Mix well. Cover and cook for 10 minutes on low heat for veggies to get soft 🍚
Step 8
Once the veggies are soft, add the flattened rice with 1/2 cup chopped cilantro and 1 tbsp chaat/jeeravan powder 🍚
Step 9
Turn off the heat and gently mix it all up 🍚 Leave covered for 10 mins and serve garnished with Haldiram Bhujia (Spiced Tepary Beans Flour Noodles available in most Indian stores)
Spicy Cilantro Chutney
Step 10
Blend together 1 bunch fresh cilantro, 5-6 green chilies, 4-5 garlic pods, 4 green onions, 1 tbsp salt, 1 tsp cumin seeds and juice of about half a lime. 🌶
Step 11
Add a little water to make sure its a fine paste 🌶
Step 12
Serve with poha, samosas, tikkas or any other Indian meal!
