Paximadia. The Greek biscotti, if you will. Such a tasty and simple cookie to have around the house. This recipe will yield around 5 dozen, but they freeze very well and you can take them out for the times you want to serve them.

Step 1
In a mixing bowl or stand mixer combine th oil, cool but not cold butter and sugar and mix until smooth. Stire in baking powder and anise seed. Gradually stir in flour and mix or knead t a soft dough. Divde dough into 5 equal parts. Roll with your hands and shape into 2/1/2 inch wide loaves that are around 1 inch thick. Place on greased baking sheet a couple of inches apart. Score cut each loaf at an angle every 1/2 inch. Bake at 350 for 20 minutes. You'll notice they will brown a little. Remove from the oven and slice all the way through now at the score marks. Go back in the oven with them laying on their sides and bake for another 8 minutes or so, flip them onto their other side and bake again for another 7-10 minutes. Really keep an eye on them and make sure you don't take them too far. Remove from oven and place on a drying rack so air can get underneath them as well. Make sure to have one warm, they're amazing. Otherwise, let them cool completely and then store at room temp in a container. Again, feel free to freeze those you don't think you'll be eating over the next few days and you can take them out when ever you're in the mood to pump up your coffee dipping experience. For the optional sesame seeds, if you want to include those, sprinkle them over the cookies before the first baking step.
