Instructions

Step 1
Preheat the oven to 350°F (175°C), and prepare a loaf pan with melted butter and parchment paper.

Mash the ripe bananas until mostly smooth (I like to leave little chunks). Stir the melted butter into the mashed bananas.
Step 3
Mix in the baking soda and salt.
Step 4
Stir in the sugar, beaten egg, and vanilla extract.
Step 5
Mix in the flour, then pecans. The nuts are optional. You can also use coconut or chocolate chips.
Step 6
Pour the batter into your prepared loaf pan.
Step 7
Bake for 50 minutes to 1 hour at 350°F (175°C), or until a tester inserted into the center comes out clean.
